Prep and Cook Time: 40 min
Tools: Aluminum foil, baking sheet
Serves: 2
Ingredients:
1 sweet potato
Sea Salt (optional)
Olive oil or coconut oil (optional)
Instructions:
1. Pre-heat the oven to 425-450 degrees.
2. Slice the sweet potato into ¼ inch slices (peal the sweet
potato first if you’re not a fan of the skin).
3. Cover a baking sheet with aluminum foil.
4. Place the sweet potato slices on the baking sheet and put
in the oven.
5. Cook for 15 min, then flip sweet potatoes with a fork and
cook for another 15 min until they start to bubble and slightly brown like the
picture. (Cooking time may vary depending on oven).
6. Remove from the sweet potatoes and sprinkle with a little
olive oil or coconut oil as well as sea salt to desired taste.
7. Enjoy!
How funny! I made these last night before even seeing this -- so FREAKING good and I don't even usually like sweet potatoes. Thanks for the tip!
