Serves: 4
Ingredients:
Large bunch of swiss chard leaves
¼ c pine nuts
¼ c golden raisins
1 tsp minced garlic
2 tbs balsamic
2 tbs balsamic
1 tbs coconut oil
Instructions:
1. Tear swiss chard into pieces and place in salad
spinner. Rinse with water and spin to clean the swiss chard.
2. Roast the pine nuts on medium heat in a pan for
a couple min shacking often until the nuts slightly brown. Set the nuts aside.
3. Place the coconut oil in the pan and add the garlic and swiss chard. Cook for a min. and then add the balsamic.
4. Stir for several min as the swiss chard wilts.
Once the swiss chard reduces to about half, add the golden raisins and pine nuts.
Stir for another min.
5. Serve hot and enjoy!
Note: Pine nuts could be substituted for almond slices and golden raisins for cranberries. I like to mix it up!
