Because almond flour has such a high healthy fat content (a good thing!), this pizza is very filling. Brian and I usually eat half of it and save the other half for lunch the next day. This makes for easy meal planning!
Prep and Cook Time: 30 min.
Serves: 2 hungry people
INGREDIENTS:
Crust:
2 heaping cups of almond flour
2 eggs
2 tbs olive oil
½ tsp salt
¼ tsp garlic powder
¼ tsp oregano
¼ tsp Italian seasoning
Sauce:
1 6oz can tomato paste
9oz of water (will make a medium thick sauce, 6 oz for thicker sauce, 12 oz for thinner sauce)
½ garlic powder
1 tsp Italian seasoning
Mozzarella cheese
Tomato
Basil
1. While the crust is baking, combine all the sauce ingredients in a small saucepan. Add more spices to flavor to your liking.
1. At the same time you are preparing the sauce, you should also prep your toppings. If your using sausage, ground beef or chicken, this would be a good time to cook it. You can also slice up your veggies and they can go on raw or cooked depending on your preference.
INSTRUCTIONS:
1. Pre-heat the oven to 350 degrees F
2. Mix all the crust ingredients in a large mixing bowl. Your ball of "dough" will be slightly "sticky", but if it's too "mushy" add more almond flour until you get a good consistency. You should be able to pick it up all together even if it's a little sticky.
3. Grease a pizza sheet or baking sheet. I generally pour a tablespoon of olive oil on the pan. This is very important if you want your pizza slices to come off in one piece.
4. Press and spread the dough on the sheet until it is about 1/4 inch in the middle and 1/2 inch on the edges. I typically slowly press and pull the dough out from its center. Because it's sticky it will be different to spread then typical grain made dough.
5. Put the crust in the oven for 15 min. It should look slightly golden brown when you take it out.
Sauce
2. Simmer on the stove for approximately 15 min.
Toppings
The Final Product:
2. Add your cheese and other toppings evenly.
3. Put it back in the oven which should still be at 350 degrees and bake for another 15 min. until the cheese is evenly melted.
4. Slice it up and enjoy!
